Cooking...

I have been going through the fridges (we have three) and the freezer and the food cupboards and taking stock of what we have and what we use and what we store.  It is amazing how much there is in monetary value tied up in the kitchen.

I want to get it down to a manageable level and have my store cupboard stocked with things that I know I will use and I know I will be able to use to knock up a meal in a hurry and food in the freezer that I can use but more importantly recognise!!!

Our main meal today which Mum and Dad would be sharing with us was going to be a bit of a store cupboard, fridge/freezer mash up!!


The main part of our meal was going to be a meatloaf which was basically pork and apple with some herbs and spices and egg and breadcrumb to bind and then wrapped in some streaky bacon and served with an apple jus-type gravy sauce.  It was really nice and tasty and everyone seemed to enjoy it even though I think I might have put in just a little too much chilli for Mum and Dad's liking.


I served the meatloaf with something called potato casserole which was like dauphinoise potatoes.  There was a lot of cheese in this and as I had some cheese with walnut and cheese with apricot in the fridge that needed eating I used that in the sauce.  You had to caramelise the onions and then make a thick and creamy cheese sauce and then layer that with some boiled potatoes with some garlic and seasoning and it was lush!


Pudding was a crumble - we had raspberries and kumquats that needed eating and I added some stem ginger - I didn't add any extra sugar so Mum would be ok with it and it was pretty tasty, the tartness of the fruit went well with the sweetness of the crumble.

Not to bad for a make do and mend meal!!
