Sunday

Sundays are, have been and always will be, a day we try and make sure we spend with Mum so no matter what we have been up to we try and ensure that we have a really nice lunch together.

You cannot believe the difference in the weather - yesterday was awful, so stormy and unpredictable, but today there was wall to wall blue skies.  That being the case the conservatory became almost too warm to sit in!!

Although I am the one that cooks Mum often provides the meat element to our meal and today we were having Pork Tenderloin.  John had suggested we do something a bit different with it and we had found some stuffing in the freezer which was left over from Christmas so today the idea was to stuff the tenderloin and wrap it in bacon.


I had made a sauce by gently frying some onions and apples and adding some stock and the last remaining slug of Nicky's home made ginger liqueur and then I blitzed it up so it was smooth.  I served it with a Yorkshire pudding, some peas and carrots and new potatoes which were steamed with some fresh mint and then I made some 'brown' butter which adds some nutty flavour to the potatoes.  The only problem with the meal was that my potatoes probably could have done with one extra minute to just soften them to perfection.  I just could hear my Dad in my ear saying "your Sunday lunches would be perfect if you only knew how to cook vegetables!"  Dad couldn't stand vegetables remotely al dente!!!

Pudding was some apple strudel and cream and Mum demolished the lot so I am thinking I was on something of a winner this week.  This is going onto my list of successful and to be served again at some point in the future!!!

There was really not much else to report on today.  Mum and I are busy planning our itinerary for next Saturday when, for my birthday, we are having a mummy and daughter day together leaving John in peace!!
