Getting on with jobs...


Today we were 'going to work on an egg' - we were out of bread and milk but had enough other ingredients lurking in the fridge to make an omelette.  Bacon, cheese and onion in a fluffy egg and cream concoction which was absolutely delicious and as light as a feather.  We needed to go shopping later to stock up but this was good use of some bits and pieces!

We really want to try and get on with some outside jobs before we have an influx of visitors but sadly the weather just isn't playing ball.  On Wednesday there is a severe weather warning for gale force winds and driving rain so unless you can finish what you have started there isn't any point even starting.

I want to get Joani's corner sorted.  The furniture hasn't arrived yet so there isn't such urgency.  We have decided to deck that area but the level will have to be such that it isn't a trip hazard and that we can still open the shed doors.  John normally builds as wooden structure that sits proud of the shingle but that won't work so he is thinking of sinking the two pallets he has got from Jan next door and filling them with concrete and then attaching the decking to the pallet struts.   I am sure however he does it, it will be fine - all the other decking we have around the garden has lasted well so far.

I managed to do a bit more tidying this morning cutting things back and clearing weeds.  The recent chillier weather seems to have stunted growth which is a shame.  The lime tree was just putting on some lovely buds of blossom and they will probably all be on the floor after the strong winds on Wednesday.

We went shopping in the afternoon, we only needed to few bits from Paps but Monday afternoon must be a good time to go because there was next to no-one in shopping and the shelves were all stacked.  We are trying to be good with our menu planning and sticking to a shopping list but today even though I thought we were only getting a few bits the bill was just short of €100.  I had planned to make Lasagne tonight to use up a pack of lasagne sheets which were in the cupboard.  Lasagne always seemed to me to be a cheap meal but the mince was €8.99 a kilo whereas it used to be about €5.00 a kilo.

Having said that the mince did make up two large lasagnes which would probably feed us three or four times so we were having one for supper tonight and the other was probably going to go in the freezer for another time because we had the rest of the week's food planned in already.  I don't make this often as John hasn't been keen on it in the past but he is getting better and I add lots of flavour and ingredients like chili which aren't normally in the recipe.

I served the lasagne with a green salad with a lime and vinegar dressing which was delicious.  I love salad but it seems that the local lettuces have been hammered so it was either a very limp and sad looking local or extortionately priced gem leaves- no wonder our shopping bill was larger than I thought it would be!  Anyway we didn't care because John made some garlic and chili bread to go with the lasagne and the salad and it was absolutely delicious and John said he was even looking forward to having it again which is just as well as we have so much left!!!

We watched the remainder of the series Desperate Measures before going to bed - early start tomorrow as John is going on a mega ride with the boys and I am going to Nicosia with Jan and Gail.
